  • ⅓ cup packed brown sugar
  • ¼ cup old-fashioned oats
  • 1 teaspoon ground cinnamon (for streusel)
  • ¼ teaspoon salt (for streusel)
  • ¼ cup cold unsalted butter (cubed for streusel)
  • 8 oz cream cheese (softened for frosting)
  • ¼ cup unsalted butter (softened for frosting)
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)
  • Pinch of salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Prepare the streusel topping by mixing flour, brown sugar, oats, cinnamon, and salt; cut in cold butter until crumbly.
  3. In another bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. Cream softened butter and sugar until fluffy. Beat in eggs one at a time followed by vanilla extract.
  5. Gradually mix in dry ingredients alternately with milk until combined; fold in diced apples gently.
  6. Fill muffin cups two-thirds full with batter and sprinkle on streusel topping.
