  • 350 g Lotus biscoff cookies
  • 150 g unsalted butter (melted)
  • 690 g cream cheese (softened)
  • 3 tart apples (peeled and sliced)
  • 75 g granulated sugar
  • 100 g Greek yogurt
  • 3 large eggs (room temperature)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 55 g unsalted butter (melted)
  • 50 g all-purpose flour
  • 50 g brown sugar
  • 20 g rolled oats
  • 2 teaspoons cornstarch

Instructions

  1. Preheat oven to 160°C (320°F). Crush cookies and mix with melted butter; press into the bottom of a springform pan.
  2. Combine sliced apples with brown sugar, cinnamon, and cornstarch; set aside.
  3. Beat cream cheese until smooth; gradually add sugar, then stir in Greek yogurt, spices, and eggs until well combined.
  4. Layer half the cheesecake filling over the crust, add apple filling, then top with remaining cheesecake filling.
  5. Bake for about 85 minutes until edges are set but center is slightly jiggly. Cool at room temperature before adding streusel topping.
  6. For the streusel: Mix melted butter with flour, brown sugar, and oats until crumbly; sprinkle over cooled cheesecake and bake for an additional 10-15 minutes.
  7. Chill in the refrigerator for several hours or overnight before serving.
