  • 2 medium apples
  • 30 g light brown sugar (for filling)
  • 1/2 tsp cinnamon (for filling)
  • 1/4 tsp mixed spice (for filling)
  • 1 tsp cornflour (cornstarch)
  • 10 g butter (unsalted)
  • 8 g light brown sugar (for crumble topping)
  • 17 g plain flour (for crumble topping)
  • 1/8 tsp cinnamon (for crumble topping)
  • 175 g butter (softened, unsalted)
  • 175 g light brown sugar (for cupcakes)
  • 3 large eggs
  • 175 g self-raising flour
  • 1/2 tsp cinnamon (for cupcakes)
  • 1/4 tsp mixed spice (for cupcakes)
  • 350 g icing sugar (for buttercream)
  • 1 1/2 tsp cinnamon (for buttercream)
  • 23 tbsp milk

Instructions

  1. Prepare the apple filling by peeling and chopping apples. Cook with light brown sugar, cornflour, cinnamon, and mixed spice for 10-15 minutes until tender. Allow to cool.
  2. Make the crumble topping by combining plain flour, light brown sugar, and cinnamon with butter until crumbly. Bake at 180C for 10-15 minutes until golden.
  3. For the cupcakes, cream softened butter and light brown sugar. Add eggs one at a time, then fold in self-raising flour and spices. Divide into cases and bake at 160C for 20-25 minutes.
  4. Once cooled, fill each cupcake with apple filling. Whip together softened butter, icing sugar, cinnamon, and milk for the buttercream frosting. Pipe onto cupcakes and sprinkle with crumble.
