  • 2 kg apples (Fuji, Royal Gala, or Pink Lady)
  • 1 tsp salt
  • 1 tbsp cornstarch
  • 4 egg yolks
  • 2 tbsp cornstarch
  • 600 ml milk (whole, skimmed, lactose-free, or plant-based)
  • 50 g granulated sugar
  • 1/4 tsp salt
  • 2 tsp vanilla bean paste

Instructions

  1. Prepare the apple filling by peeling and slicing the apples thinly. In a saucepan over medium heat, combine sliced apples with sugar, salt, and cornstarch. Cook until soft.
  2. For the vanilla custard, whisk together egg yolks, cornstarch, sugar, salt, and vanilla bean paste. Heat milk until just simmering and gradually whisk into the egg mixture. Return to low heat and stir until thickened.
  3. Layer apple filling and custard in a mold until all ingredients are used. Chill for at least 30 minutes before serving.
