  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef cubes until browned on all sides; remove from the pot.
  2. In the same pot, sauté onion and garlic until translucent.
  3. Stir in tomato paste and cook for an additional minute.
  4. Deglaze the pot with a splash of beef broth, scraping up browned bits.
  5. Add the seared beef back to the pot along with remaining broth and vegetables.
  6. Season with thyme, rosemary, bay leaf, salt, and pepper.
  7. Bring to a boil then reduce heat to low. Cover and simmer for about 2 hours until beef is tender.
  8. Adjust seasoning as needed before serving hot with fresh parsley garnished on top.
