  • 3 ½4 lb beef shoulder
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 3 cups chicken broth
  • 1 cup prunes
  • 2 apples
  • 2 tbsp cornstarch

Instructions

  1. Trim excess fat from the beef shoulder and cut into 2-inch chunks.
  2. Heat olive oil in a large pot over medium-high heat. Season the beef with salt and brown in batches until golden on all sides.
  3. Remove the beef and sauté diced onions in the same pot until softened, then add minced garlic.
  4. Deglaze the pot with apple juice, scraping up browned bits.
  5. Return the beef to the pot, add chicken broth, cover, and simmer on low for about an hour.
  6. Add prunes and quartered apples; cook until apples are tender, about 15 minutes.
  7. Create a cornstarch slurry with broth, stir into stew, and cook until thickened.
