  • 1 pound beef tenderloin
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • ½ onion (minced)
  • 2 cups button mushrooms (finely chopped)
  • 1 tablespoon regular soy sauce
  • ½ cup pitted black olives
  • 1 pound puff pastry
  • Mustard (to taste)
  • 1 egg (beaten)

Instructions

  1. Cut the beef into 1-inch pieces and season with salt and pepper.
  2. In a skillet, heat olive oil over high heat and brown half of the beef pieces for about 1-2 minutes. Set aside on paper towels.
  3. In the same skillet, sauté onion and mushrooms on medium-low for about 10 minutes until softened.
  4. Stir in soy sauce, add black olives, and pulse in a food processor until combined.
  5. Roll out puff pastry and cut into squares. Place mustard and filling on each square, adding beef on top.
  6. Fold corners of pastry over filling and brush with beaten egg.
  7. Bake at 400°F (200°C) for 10-15 minutes until golden brown.
