  • 1 lb carrots (cut in strips)
  • 2 Granny Smith apples (peeled, cored, and sliced thickly)
  • 2 sweet potatoes (peeled and sliced lengthwise)
  • 2 tablespoon olive oil
  • 1/3 cup dark brown sugar
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning (optional)
  • 3 tablespoon Dijon mustard
  • 1/2 cup brown sugar
  • 1 tablespoon parsley (chopped, for decoration)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix olive oil, dark brown sugar, sea salt, black pepper, Italian seasoning (if using), and Dijon mustard. Rub this mixture over the beef loin.
