  • 1 Tablespoon olive oil
  • 1/2 cup red bell pepper, chopped
  • 1/2 cup sweet onion, chopped
  • 1 pound lean ground beef
  • 1/2 cup salsa
  • 15 ounce can black beans, rinsed and drained
  • 15 ounce can corn, drained
  • 14.5 ounce can diced tomatoes
  • 4 ounce can diced green chiles
  • 1 cup jasmine rice, rinsed
  • 2 cups chicken stock
  • 1 cup shredded cheddar/jack cheese
  • Salt & Pepper (to taste)

Instructions

  1. Sauté chopped onions and red peppers in olive oil over medium heat until soft (3-5 minutes).
  2. Add lean ground beef; cook until browned (5-7 minutes). Drain excess grease and season with salt and pepper.
  3. Stir in salsa, black beans, corn, diced tomatoes, green chiles, jasmine rice, taco seasoning, chili powder, and chicken stock. Bring to a boil.
  4. Cover and reduce heat; simmer for 15 minutes until rice is cooked.
  5. Check seasoning; stir in cheese until melted before serving.
