  • 16 oz cream cheese (softened)
  • 1/2 cup granulated sugar

  • 1 tsp vanilla extract
  • 3 medium Granny Smith apples (peeled and diced)
  • 2 tbsp lemon juice
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter (cold and cubed)
  • 1/4 cup chopped pecans (optional)
  • 1 cup granulated sugar (for caramel)
  • 1/4 cup water (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 2 tbsp unsalted butter (for caramel)
  • 1/4 tsp salt (for caramel)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. In a bowl, mix graham cracker crumbs, melted butter, granulated sugar, and cinnamon. Press this mixture into the bottom of the prepared pan for the crust.
  3. In another bowl, beat softened cream cheese until smooth. Add granulated sugar, eggs, and vanilla extract; mix until creamy.
  4. Toss diced apples with lemon juice, brown sugar, cinnamon, and nutmeg in a separate bowl.
  5. Spread the cheesecake filling over the crust, layer on the apple mixture, then sprinkle crumble topping made from flour, brown sugar, and cubed cold butter.
  6. Bake for about 45 minutes or until set. Allow to cool before slicing into bars.
  7. While cooling, make the caramel sauce by combining granulated sugar and water in a saucepan over medium heat until dissolved. Cook without stirring until it turns golden brown; then carefully add heavy cream, butter, and salt while stirring continuously.
