  • 1/3 cup (80 ml) heavy cream
  • 2 chai tea bags
  • 1/2 cup (112 g) unsalted butter
  • 1 cup (220 g) light brown sugar
  • 1 1/2 tsp ground cinnamon
  • 3/4 tsp ground ginger
  • 1/4 tsp ground allspice
  • 1/4 tsp ground nutmeg
  • 3/4 tsp ground cardamom
  • 1/8 tsp ground cloves
  • 1/3 cup (116 g) honey
  • 1 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup (112 g) unsalted butter
  • 1 cup (220 g) light brown sugar
  • 1 tbsp ground cinnamon
  • 1 1/2 tsp ground ginger
  • 1/2 tsp ground allspice
  • 1/2 tsp ground nutmeg
  • 1 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1/4 cup (60 ml) heavy cream
  • 6 tbsp (84 g) unsalted butter
  • 6 oz (170 g) cream cheese
  • 3/4 cup (97 g) powdered sugar
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/8 tsp ground allspice
  • 1/8 tsp ground nutmeg
  • 1/4 tsp ground cardamom
  • pinch of cloves

Instructions

  1. Warm the milk to 110°F and combine with yeast and sugar; let it froth for 5 minutes.
  2. Mix flour, spices, and salt in a separate bowl. Gradually add to the yeast mixture along with eggs and butter until combined.
  3. Knead the dough for about 5 minutes until smooth. Let it rise covered in a warm place until doubled in size (about 1 hour).
  4. Prepare chai filling by steeping cream with chai bags; mix with remaining filling ingredients.
  5. Roll out the dough into a rectangle, spread filling evenly, roll tightly into a log, and cut into pieces.
  6. Place rolls in a baking dish over caramel sauce; let rise again for 30 minutes before baking at 350°F for about 30 minutes.
  7. Whip together frosting ingredients while rolls cool slightly and spread on top before serving.
