  • 1 lb ground beef
  • 3 poblano peppers
  • 2 large onions
  • 5 cloves garlic
  • 1 15-ounce can kidney beans
  • 2 cans diced tomatoes
  • 1 1/2 tbsp chili powder
  • 1 tsp dried oregano
  • 1 tsp dried cumin
  • 1 tsp smoked paprika
  • 1 tsp sea salt
  • 1/4 tsp coarse ground black pepper
  • 1 cup water or stock

Instructions

  1. In a large pot over medium-high heat, brown the chicken sausage and ground beef for about 8-10 minutes. Remove and set aside.
  2. In the same pot, sauté diced onions, poblano peppers, and garlic until soft and golden brown (about 10 minutes).
  3. Add kidney beans and all spices; cook for another 2 minutes.
  4. Stir in diced tomatoes and return browned meats to the pot with one cup of water or stock. Bring to a boil then reduce heat to simmer for one hour.
