  • 2 cups uncooked macaroni
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1 packet chili seasoning mix
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes (undrained)
  • 1 cup milk
  • 1 ½ cups shredded cheddar cheese
  • ½ cup chicken broth (can substitute beef broth)
  • 1 tablespoon tomato paste
  • 1 can kidney beans, drained
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • ½ teaspoon mustard powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • ½ teaspoon hot sauce
  • Fresh parsley (to garnish)

Instructions

  1. In a large skillet over medium heat, cook the ground beef with diced onion and bell pepper until browned. Add garlic and cook for an additional minute.
  2. Stir in the chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans. Let simmer.
  3. In another pot, melt butter to create a roux with flour, then whisk in heavy cream and milk until smooth. Season with mustard powder, onion powder, salt, pepper, and hot sauce.
  4. Add uncooked macaroni to the cheese sauce and cook until al dente. Mix in shredded cheddar cheese until melted.
  5. Combine the chili mixture with the cheesy macaroni in a serving dish and stir well. Garnish with parsley before serving.
