  • 1 1/2 cups all-purpose flour
  • 1/2 cup Dutch-process cocoa powder
  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar
  • 1/4 cup granulated white sugar
  • 2 egg yolks
  • 1 1/2 tsp vanilla extract
  • 5 oz chopped chocolate
  • 1/4 cup cherry preserves
  • 1/4 cup + 2 tbsp heavy cream
  • 1/2 tsp baking powder
  • 1/2 tsp sea salt

Instructions

  1. Preheat your oven to 350°F (175°C). In one bowl, mix flour, cocoa powder, baking powder, and salt. In another bowl, cream together softened butter and sugars until light and fluffy.
  2. Add egg yolks and vanilla to the butter mixture; blend well. Gradually incorporate the dry ingredients until just combined.
  3. Scoop tablespoon-sized balls onto lined baking sheets and make an indent in the center of each ball.
  4. Bake for about 10 minutes; allow them to cool on a wire rack.
  5. For the ganache, heat heavy cream until simmering. Pour over chopped chocolate; let sit for a minute before stirring until smooth.
  6. Fill each cookie's indent with cherry preserves followed by the ganache; let set before serving.
