  • 1 tsp vanilla extract
  • 2 tbsp vegetable oil
  • 10 oz raspberries (fresh or frozen)
  • 1/4 cup sugar
  • 1 tbsp lemon juice
  • 9 oz cream cheese (room temperature)
  • 1/2 cup powdered sugar
  • 1 cup whipping cream (chilled)
  • 9 oz fresh raspberries
  • 6 oz white chocolate
  • 1/4 cup whipping cream (for garnishing)
  • Pinch of salt
  • Fresh raspberries for garnishing
  • Star anise for garnishing
  • Fresh rosemary for garnishing
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a jelly roll pan by greasing and lining it with parchment paper.
  2. Whisk flour, baking powder, and salt in one bowl, while beating eggs and sugar until fluffy in another. Mix in vanilla and oil before folding in dry ingredients.
  3. Pour the batter into the pan and bake for about 10 minutes until golden.
  4. Prepare the raspberry filling by cooking raspberries, sugar, and lemon juice over medium heat until thickened.
  5. Beat cream cheese with powdered sugar and vanilla for the second filling.
  6. Once cooled, spread the cream cheese mixture on the sponge, followed by raspberry filling, then roll tightly using a kitchen towel.
  7. Chill for one hour before topping with whipped cream and garnishing as desired.
