  • ⅓ cup sour cream
  • ⅓ cup heavy cream
  • 4 eggs
  • 1 box chocolate cake mix
  • ¾ cup cocoa powder
  • 2 cups butter (cold and cut into chunks)
  • 10 cups powdered sugar
  • 2 tbsp vanilla
  • ⅔ cup plus 2 tbsp heavy cream
  • Pinch of salt
  • Green gel food coloring
  • Golden star sprinkles
  • Holiday sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C). In a large bowl, whisk together vegetable oil, sour cream, heavy cream, and eggs until smooth.
  2. Add chocolate cake mix, cocoa powder, and espresso powder (if using) to the mixture. Stir until just combined.
  3. Line cupcake trays with paper liners and fill each about two-thirds full with batter. Bake for 15 minutes or until a toothpick comes out clean. Let cool completely.
  4. For the frosting, beat cold butter until creamy; gradually add powdered sugar while mixing on low speed. Increase speed and add vanilla extract, heavy cream, salt, and green gel food coloring until desired shade is reached.
  5. Once cooled, pipe green frosting onto each cupcake like tree branches and decorate with star sprinkles.
