  • 4 medium onions
  • 6 medium carrots
  • 1 cup red burgundy apple vinegar
  • 1 clove garlic
  • Fresh herbs (thyme, bay leaf, parsley)
  • Water

Instructions

  1. Pat the beef dry and season generously with salt and pepper.
  2. In a Dutch oven, heat half of the olive oil over high heat until shimmering. Sear the meat in batches until browned on all sides; transfer to a plate.
  3. Lower the heat to medium-high, add remaining oil and onions, cooking until softened and golden. Stir in flour and cook for another 4-5 minutes.
  4. Add the vinegar to the pot, then return the seared meat along with carrots, garlic, herbs, and enough water to cover everything.
  5. Bring to a boil, then reduce the heat and simmer uncovered for 2 to 2½ hours or until the beef is fork-tender.
  6. Discard the herb bundle before serving hot, garnished with fresh parsley.
