  • 2 medium zucchinis, sliced
  • 1 cup spinach, chopped
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cottage cheese
  • 2 large eggs
  • 1 cup shredded mozzarella
  • ½ cup grated Parmesan
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Toss zucchini, bell pepper, tomatoes, olive oil, oregano, garlic powder, salt, and pepper in a bowl. Spread on a baking sheet and roast for about 15 minutes.
  3. In another bowl, mix cottage cheese with eggs until smooth; fold in half the mozzarella.
  4. Grease a baking dish and layer half the roasted veggies, followed by the cottage cheese mixture. Top with remaining veggies and sprinkle with remaining mozzarella and Parmesan.
  5. Bake for 30–35 minutes until bubbly and golden brown.
  6. Let rest for 10 minutes before serving; garnish with fresh herbs.
