  • 2 tbsp unsalted butter
  • ½ cup onion (finely chopped)
  • ½ cup celery (finely chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp tomato paste
  • 1 tsp Old Bay seasoning
  • 2 cups chicken broth
  • 1 ½ cups heavy cream
  • 1 tbsp lemon juice

Instructions

  1. Sauté finely chopped onion, celery, and minced garlic in melted butter over medium heat for about 3-4 minutes until soft.
  2. Stir in tomato paste, Old Bay seasoning, salt, black pepper, and optional cayenne; cook for another 1-2 minutes.
  3. Add flour to form a roux, stirring for about one minute.
  4. Gradually pour in the chicken broth while stirring; simmer for about 10 minutes.
  5. Lower the heat and mix in heavy cream and lemon juice; simmer gently for an additional 5 minutes.
  6. Gently fold in the lump crab meat and warm through for another 2-3 minutes.
  7. Taste and adjust seasonings before serving hot.
