  • 1 cup cherry tomatoes
  • 1 cup fresh spinach leaves
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper

  1. Cook the pasta according to package instructions until al dente; reserve 1/4 cup of cooking water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Add seasoned chicken and cook until golden brown, about 5-7 minutes. Stir in minced garlic towards the end.

  4. Lower heat and mix in ricotta cheese, then gradually stir in reserved pasta water. Add Parmesan cheese and optional red pepper flakes.
