  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh spinach leaves
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/4 cup fresh basil, chopped (for garnish)
  • 1/4 cup reserved pasta cooking water

Instructions

  1. Cook the pasta according to package instructions until al dente. Reserve about 1/4 cup of cooking water before draining.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces seasoned with salt and pepper; cook until golden brown (about 5-7 minutes).
  3. Add garlic, cherry tomatoes, and spinach to the skillet; cook for another 2-3 minutes until vegetables are tender.
  4. Lower the heat and stir in ricotta cheese. Gradually add reserved pasta water until you achieve your desired sauce consistency. Mix in grated Parmesan and red pepper flakes if using.
  5. Combine the cooked pasta with the sauce, tossing gently to coat.
  6. Serve hot garnished with fresh basil and extra Parmesan if desired.
