  • 3 cups peeled and diced butternut squash
  • 1 small red onion, diced
  • 12 ounces spicy Italian sausage (or chicken/beef sausage)
  • 2 cloves garlic, minced
  • 1 bunch Swiss chard, thick stems removed and chopped
  • 1 teaspoon red chili flakes
  • Salt and pepper, to taste
  • 8 ounces rigatoni
  • ¼ cup crème fraîche
  • ⅓ cup grated Parmesan, plus extra for serving

Instructions

  1. Heat olive oil in a large sauté pan over medium heat. Add diced butternut squash and cook until lightly browned and tender.
  2. Stir in diced red onion and cook for 4 minutes until soft. Add spicy sausage, breaking it into pieces, and cook until browned.
  3. Mix in minced garlic, chopped Swiss chard, and red chili flakes, cooking until the chard wilts.
  4. In a separate pot, boil salted water and cook rigatoni until al dente (about 8 minutes). Reserve some pasta water before draining.
  5. Combine rigatoni with the sautéed mixture, adding reserved pasta water, crème fraîche, and grated Parmesan to create a creamy sauce.
  6. Serve hot, garnished with extra Parmesan if desired.
