  • 2 cloves garlic, minced
  • 1 tbsp all-purpose flour
  • 1 cup heavy cream (or whole milk/half & half)
  • 0.5 cup Parmesan cheese, grated (plus extra for topping)
  • 1 tsp fresh thyme
  • 0.5 tsp kosher salt
  • 0.5 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish.
  2. Peel and thinly slice the Yukon gold potatoes.
  3. In a large pot, melt butter over medium heat and sauté minced garlic until fragrant.
  4. Stir in flour to create a roux; cook for 1-2 minutes.
  5. Gradually whisk in heavy cream, cooking until slightly thickened (about 5 minutes).
  6. Mix in Parmesan cheese, thyme, salt, and black pepper until smooth.
  7. Toss sliced potatoes in the sauce until well coated.
  8. Layer potato slices upright in the greased baking dish and pour remaining sauce over top.
  9. Sprinkle with extra Parmesan cheese and cover with foil.
  10. Bake for 30 minutes covered, then uncover and bake another 30 minutes until golden brown and bubbling.
  11. Let cool for about ten minutes before serving.
