  • 2 cups grilled or roasted corn
  • 1 head romaine lettuce, shredded
  • 1 avocado, diced
  • 4 ounces cream cheese
  • 1/3 cup sour cream
  • 3/4 cup crumbled cotija or feta cheese
  • Fresh herbs (basil and cilantro)
  • Spices (smoked paprika and chili powder)
  • 2 tablespoons extra virgin olive oil
  • 12 grated garlic cloves
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper to taste
  • 4 tablespoons salted butter
  • 2 teaspoons smoked paprika
  • 2 tablespoons chili powder
  • 1/2 to 2 teaspoons cayenne pepper (adjust to preference)
  • 1/4 cup mayonnaise or yogurt
  • 2 tablespoons lime juice

Instructions

  1. Cook the short pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a bowl, whisk together cream cheese, sour cream, olive oil, grated garlic, chopped chives, salt, and pepper until smooth.
  3. In a large bowl, combine cooked pasta, shredded romaine lettuce, grilled corn, torn basil, and chopped cilantro.
  4. Pour the dressing over the salad mixture and gently fold until well coated.
  5. Melt salted butter in a pan; add smoked paprika, chili powder, lime juice, and mayonnaise. Stir until combined and pour over the salad mix.
  6. Toss gently one last time before serving.
