  • 4 boneless skinless chicken breasts

  • kosher salt
  • black pepper
  • non-stick spray
  • 5 ounces goat cheese log
  • 1/2 cup mayonnaise
  • 1/3 cup sun-dried tomatoes, drained and chopped
  • 1 plump garlic clove, minced
  • 1 tsp dried basil
  • 1/2 tsp kosher salt
  • black pepper
  • 1 cup panko bread crumbs
  • 2 tbsp mayonnaise
  • 1 tsp dried basil
  • pinch of salt
  • pepper
  • red pepper flakes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a rimmed baking sheet by lining it with foil and spraying it with non-stick spray.
  3. In a bowl, mix softened goat cheese, mayonnaise, chopped sun-dried tomatoes, minced garlic, dried basil, kosher salt, and black pepper until well combined.
  4. Slice each chicken breast horizontally to create a pocket and stuff generously with the goat cheese mixture.
  5. In another bowl, combine panko breadcrumbs with additional mayonnaise, dried basil, salt, pepper, and red pepper flakes. Coat each stuffed chicken breast in this mixture.
  6. Place the prepared chicken on the baking sheet and bake for about 25 minutes until golden brown and cooked through.
