  • 1 pound cauliflower florets
  • 1 pound extra lean ground beef
  • 1 1/4 tablespoons olive oil
  • 1/4 cup tomato paste
  • 2 tablespoons honey
  • 2 tablespoons chili crunch
  • 2 tablespoons soy sauce or coconut aminos
  • 2 tablespoons black vinegar or rice vinegar
  • 1/3 cup water
  • 4 scallions

Instructions

  1. Prepare the sauce by combining tomato paste, honey, chili crunch, soy sauce, vinegar, water, and chopped scallion whites in a bowl.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté cauliflower florets for 4-5 minutes until slightly browned; set aside.
  3. In the same skillet, add ground beef with remaining olive oil. Cook until browned and fully cooked through.
  4. Pour sauce over beef and cook for another 1-2 minutes until thickened. Add sautéed cauliflower back to the skillet and toss well.
  5. Garnish with scallion greens before serving.
