  • 1 cup chopped white fingerling potato
  • 2 garlic cloves, minced
  • 1 teaspoon sea salt (plus more to taste)
  • 1 teaspoon black pepper (plus more to taste)
  • 2 teaspoons turmeric
  • 2 teaspoons ground cumin
  • 2 teaspoons ground ginger
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cinnamon
  • 1 cup green lentils
  • 1 cup red lentils
  • 4 cups vegetable broth
  • 2 cups water
  • 1/4 cup tomato paste
  • 1 cup almond milk (or coconut milk)
  • 1 tablespoon lemon juice
  • 23 cups spinach

Instructions

  1. In a large stockpot or Dutch oven, heat the avocado oil over medium heat. Add the onions, celery, carrots, potatoes, and garlic; sauté for about 5 minutes until softened. Season with salt, pepper, and spices.
  2. Stir in the green and red lentils; sauté for an additional 1-2 minutes to enhance their flavor.
  3. Pour in the vegetable broth and water; stir in the tomato paste until dissolved. Bring to a boil, then reduce to a simmer for about 30 minutes.
  4. Remove from heat and stir in almond milk, lemon juice, and fresh spinach until wilted. Serve hot.
