  • 1/2 lb beef (or substitute with chicken, shrimp, or tofu)
  • 1 cup cabbage (thinly sliced)
  • 3/4 cup mushrooms (sliced)
  • 1/2 cup carrots (julienned)
  • 1/2 onion (julienned)
  • For the sauce: vegetable oil, dark soy sauce, regular soy sauce, rice vinegar, sugar

Instructions

  1. Prepare the sauce by mixing all sauce ingredients in a small bowl.
  2. Soak udon noodles in hot water for 30-60 seconds until loosened; strain immediately.
  3. Heat vegetable oil in a large skillet over medium-high heat. Stir-fry beef until golden brown (2-3 minutes); remove from pan.
  4. Lower heat to medium; stir-fry garlic and onion until translucent. Add cabbage, mushrooms, and carrots; sauté until softened.
  5. Toss noodles back into the skillet with the sauce and cooked beef; mix until coated.
