  • 1 cup warm water (110°F/43°C)
  • 1 tablespoon honey (or sugar)
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup olive oil (extra virgin), plus more for drizzling
  • 2 tablespoons fresh rosemary (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon sea salt (flaky or coarse)

Instructions

  1. In a large bowl, dissolve the yeast and honey in warm water. Let sit for about 5 minutes until foamy.
  2. Stir in flour, salt, and olive oil until a sticky dough forms. Cover and let rise in a warm place for 45–60 minutes until doubled.
  3. Preheat oven to 375°F (190°C). Grease a muffin tin with olive oil.
  4. Spoon dough into muffin cups, filling each about ¾ full.
  5. Drizzle with olive oil and sprinkle with rosemary, garlic, and flaky salt.
  6. Bake for 18–20 minutes until golden brown; rotate halfway through baking.
  7. Allow to cool slightly before transferring to a wire rack.
