  • 8 oz bow tie pasta
  • 1 cup pumpkin seeds (toasted)
  • 8 oz baby spinach
  • 4 oz goat cheese (crumbled)
  • ½ cup dried cranberries
  • ⅓ cup extra virgin olive oil
  • 2 tablespoons Dijon mustard
  • ¼ cup maple syrup
  • juice of 1 small lime

Instructions

  1. Preheat your oven to 400°F (200°C). Toss cubed butternut squash in olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until golden.
  2. Meanwhile, cook bow tie pasta in salted water according to package instructions. Drain and set aside.
  3. In a bowl, whisk together olive oil, Dijon mustard, maple syrup, and lime juice to make the dressing.
  4. In a large bowl, combine roasted squash, cooked pasta, pumpkin seeds, spinach, goat cheese, and cranberries. Drizzle with dressing and gently toss to combine.
