  • 2 teaspoons instant dry yeast
  • 2 teaspoons sugar
  • 4 cups all-purpose flour (or bread flour)
  • 3 teaspoons salt
  • 2 tablespoons extra virgin olive oil (+ for greasing)

Instructions

  1. Combine lukewarm water, yeast, and sugar in a bowl; let sit for 30 seconds.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and mix until you have a sticky dough.
  3. Stir in olive oil until well combined.
  4. Allow the dough to rise by covering it with a damp cloth for 1.5–2 hours or refrigerate overnight for slow proofing.
  5. Once risen, fold the dough in the bowl about 20–40 times.
  6. Grease your baking pan with olive oil and transfer the dough; spread it out gently.
  7. Cover again for final proofing while preheating the oven to 450°F (230°C).
  8. Create dimples in the dough using wet fingers; drizzle with remaining olive oil and sprinkle with salt or rosemary if desired.
  9. Bake for 20–25 minutes until golden brown.
