  • 2 lbs new potatoes, halved
  • 1 lb green beans, trimmed
  • 12 dry-cured black olives
  • Fresh flat parsley
  • Fresh chives
  • 1/3 cup extra virgin olive oil
  • 2 tbsp lemon juice
  • 2 tbsp white grape juice vinegar
  • 2 garlic cloves, minced
  • 2 tsp Dijon mustard
  • 1 tbsp chopped capers
  • 1/2 tsp salt
  • 1/2 tsp freshly ground black pepper

Instructions

  1. Hard-boil the eggs: Boil in water for 1 minute, then cover and let rest for 10 minutes. Cool under running water, peel, and quarter.
  2. Cook potatoes: Boil halved new potatoes in salted water for about 12 minutes until tender but firm.
  3. Add green beans: Incorporate the green beans and cook for an additional 2-3 minutes until bright green.
  4. Prepare vinaigrette: Shake together olive oil, lemon juice, vinegar, garlic, mustard, capers, olives, salt, and pepper in a jar.
  5. Combine: Toss cooked vegetables with herbs and half of the vinaigrette; add egg quarters on top and drizzle remaining dressing.
