  • 1 ½2 pounds boneless skinless chicken thighs (or breasts)
  • 1 pound baby Dutch potatoes, quartered
  • 3 cups broccoli florets
  • 1/3 cup olive oil
  • 3 cloves garlic, minced
  • 3 tablespoons freshly squeezed lemon juice
  • 2 teaspoons lemon zest
  • 1 tablespoon Dijon mustard
  • 1 tsp EACH salt, pepper, dried basil, dried oregano, onion powder
  • 1/2 tsp EACH paprika, ground cumin, dried thyme, sugar
  • 1 cup Greek yogurt or sour cream
  • 1/4 cup finely grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped chives (optional)
  • 1 tablespoon minced dill (optional)
  • 1/4 tsp EACH salt, ground cumin
  • 1/8 teaspoon pepper

Instructions

  1. In a sealable bag, combine olive oil, minced garlic, lemon juice, lemon zest, Dijon mustard, and spices. Reserve 2 tablespoons for veggies.
  2. Add chicken to the marinade in the bag, seal tightly, and shake to coat. Marinate at room temperature for 20 minutes.
  3. Preheat oven to 400°F. Line a sheet pan with foil and spray lightly with cooking spray.
  4. Toss quartered potatoes with reserved marinade; spread on one side of the pan and bake for 15 minutes.
  5. Add broccoli tossed with remaining marinade and marinated chicken to the pan in a single layer.
  6. Bake for another 17-22 minutes until the chicken reaches 170-175°F.
  7. Meanwhile, whisk together sauce ingredients; refrigerate until serving.
