  • 1 cup brown sugar (packed)
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1/3 cup molasses (cooking or fancy molasses work best)
  • 1/3 cup white sugar (or coarse sugar)
  • 1/2 cup unsalted butter (softened)
  • 3/4 cup vegan marshmallows cream (about 1/2 of a 7.5 ounce jar)
  • 1/4 teaspoon salt
  • 11 1/2 cup powdered sugar
  • 1 tablespoon milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, whisk together flour, ground ginger, baking soda, and spices.
  2. In another bowl, cream unsalted butter and brown sugar until fluffy. Mix in the egg, vanilla extract, and molasses until combined.
  3. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  4. Scoop tablespoons of dough onto lined baking sheets and bake for about 10 minutes until set but soft in the center. Cool on wire racks.
  5. For frosting, beat softened butter and vegan marshmallow cream until smooth; gradually add powdered sugar and milk to achieve desired consistency.
  6. Assemble by spreading frosting between two cooled cookies.
