  • 1 cup plain whole-milk yogurt
  • 1 cup sugar
  • 3 large eggs
  • 2 teaspoons grated orange zest
  • 1/2 cup vegetable oil
  • 1 1/2 cups cranberries (fresh or frozen)
  • 1/3 cup freshly squeezed orange juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, combine the yogurt, sugar, eggs, orange zest, and vegetable oil; whisk until smooth.
  4. Gradually add the dry mixture to the wet ingredients and stir gently until just combined. Fold in the cranberries tossed in one tablespoon of flour.
  5. Pour the batter into a greased 9-inch loaf pan and smooth the top.
  6. Bake for about 60 minutes or until a toothpick comes out clean.
  7. For the glaze, mix sugar and confectioners’ sugar with enough orange juice for desired consistency; drizzle over the cooled loaf.
