  • 1 free-range turkey (about 5 kg)
  • 2 onions (peeled, halved)
  • 1 lemon (halved)
  • 1 head of garlic (halved horizontally)
  • 6 bay leaves
  • Olive oil
  • Sea salt and freshly ground black pepper
  • 375 g butter
  • 3 cloves garlic (peeled, crushed)
  • Juice and zest of 2 small lemons
  • A small bunch of flat-leaf parsley leaves (chopped)

Instructions

  1. Preheat your oven to 220°C.
  2. Make herb butter by mixing butter with sea salt, black pepper, olive oil, lemon juice, lemon zest, chopped parsley, and crushed garlic until creamy.
  3. Season the turkey's cavity with salt and pepper; stuff it with halved onions, lemon halves, garlic halves, and bay leaves.
  4. Loosen the skin over the turkey breast and stuff it with the herb butter.
  5. Rub any remaining herb butter on the skin; season generously with salt and pepper.
  6. Roast at 180°C for about 2½ hours, basting every half hour.
  7. Let the turkey rest for about 45 minutes before carving.
