  • 1 cup all-purpose flour
  • ¼ cup powdered sugar
  • ½ cup butter (room temperature)
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • 1 cup grapefruit juice
  • 1 tablespoon grapefruit zest

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare an 11×7-inch baking dish by greasing it or lining it with parchment paper.
  2. Make the crust by blending flour, powdered sugar, salt, and butter until crumbly. Press into the bottom of the prepared dish and bake for 18-20 minutes until golden brown.
  3. Prepare the filling by whisking together granulated sugar and flour, then adding eggs one at a time. Mix in grapefruit juice and zest until smooth.
  4. Pour the filling over the baked crust and return to the oven for an additional 20 minutes or until set.
  5. Allow bars to cool completely before refrigerating for at least one hour before cutting into squares.
