  • 60g Greek yogurt
  • 100g feta cheese
  • 3 large baking potatoes
  • 4 cloves of garlic
  • 1 lemon (juice and zest)
  • Olive oil
  • Honey
  • Oregano
  • Thyme
  • Chili flakes

Instructions

  1. Preheat your oven to 220°C (428°F) and parboil the chopped potatoes for about 10 minutes.
  2. Drain the potatoes and fluff them in the pot before transferring them to a hot baking tray with olive oil.
  3. Season with oregano, thyme, salt, and pepper; mix well.
  4. Add quartered lemon pieces and unpeeled garlic among the potatoes and roast for 20 minutes.
  5. Remove lemon and garlic; continue roasting for another 25 minutes until golden brown.
  6. Prepare a paste with roasted garlic and lemon skin mixed with honey and chili flakes.
  7. Blend feta cheese, Greek yogurt, olive oil, lemon juice, salt, and pepper until smooth for whipped feta.
  8. Serve by spreading whipped feta on a plate, topping with potatoes, and garnishing with parsley.
