  • 1 pound cherry tomatoes (halved, equaling 4 cups)
  • 6 ounces fresh mozzarella pearls (drained and halved)
  • 1 tbsp extra virgin olive oil
  • 8 large leaves of basil (1/4 ounce)
  • Flaked Maldon finishing sea salt to taste
  • Balsamic reduction or balsamic vinegar
  • 2 pounds zucchini (sliced off both ends and split in half down the middle)

Instructions

  1. Marinate the chicken by combining it with olive oil, balsamic vinegar, maple syrup, and sea salt. Let it sit in the refrigerator for at least 2 hours or overnight for best flavor.
  2. Preheat your grill to medium-high heat (around 400ºF).
  3. While the grill heats up, mix halved cherry tomatoes and mozzarella pearls in a bowl with olive oil. Set aside.
  4. Slice basil leaves thinly and add them to the salad mixture.
  5. Grill marinated chicken for about 8-10 minutes per side until fully cooked (165ºF internal temperature).
