  • 2/3 cup maple syrup or honey
  • 1/4 cup plain or vanilla Greek yogurt
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 2/3 cups whole wheat flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together pumpkin puree, maple syrup (or honey), Greek yogurt, vegetable oil, egg, and vanilla essence until smooth.
  3. In another bowl, mix whole wheat flour, cinnamon, nutmeg, baking soda, baking powder, and salt until combined.
  4. Gradually add dry ingredients to the wet mixture, stirring gently until just combined—avoid overmixing.
  5. Spoon the batter into a lined muffin tin and bake for about 18 minutes or until a toothpick inserted comes out clean.
  6. Cool in the pan for a few minutes before transferring to a wire rack.
