  • 1 head garlic
  • 2 large carrots
  • 1 small yellow squash
  • 1 small zucchini
  • 1 medium red bell pepper
  • 68 fresh Roma tomatoes
  • 1/2 medium onion
  • 46 oz white mushrooms
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with parchment paper. Cut the top off the garlic head, drizzle with olive oil, wrap in foil.
  2. Chop carrots, squash, zucchini, and bell pepper into even pieces. Halve the tomatoes and prepare the mushrooms.
  3. Place all vegetables on the baking sheet and season with olive oil, oregano, basil, salt, and pepper. Add the wrapped garlic and roast for 35-45 minutes until softened.
  4. Transfer roasted vegetables to a blender. Squeeze in the softened garlic cloves and blend until smooth. Adjust texture with water or vegetable broth as needed.
  5. Serve immediately over pasta or store for later use.
