  • 1 lb homemade rough puff pastry or store-bought frozen puff pastry (2 sheets)
  • 2 cups peeled & diced apples (about 2 medium apples)
  • 1 teaspoon cornstarch
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated or brown sugar
  • 1 large egg (for egg wash)
  • 1 tablespoon milk

Instructions

  1. Prepare your dough by refrigerating homemade puff pastry or thawing store-bought pastry.
  2. In a medium saucepan, combine diced apples, cornstarch, vanilla extract, cinnamon, and sugar. Cook over medium heat for about 10 minutes until bubbling. Allow to cool for 20 minutes.
  3. Roll out the dough into squares (4-inch) and place on parchment-lined baking sheets.
  4. Spoon about 2-3 tablespoons of apple filling onto each square. Fold into triangles and crimp edges to seal.
  5. Chill turnovers in the refrigerator for at least 15 minutes while preheating the oven to 400°F (204°C).
  6. Brush each turnover with egg wash and cut small steam vents on top. Bake for 23–25 minutes until golden brown.
