Ingredients

Scale
  • 1 3/4 cups warm water (105-115°F)
  • 2 tsp sugar
  • 1 packet active dry yeast
  • 2 cups bread flour
  • 2 cups all-purpose flour
  • 2 tsp salt
  • 6 tbsp olive oil (divided)
  • 1 jar raspberry preserves
  • 2 cups confectioners' sugar
  • Whole milk (as needed for glaze consistency)

Instructions

  1. Activate yeast by combining warm water and sugar in a bowl; sprinkle yeast over top and let bloom until foamy.
  2. In a separate bowl, mix bread flour, all-purpose flour, and salt. Create a well in the center, add the yeast mixture and olive oil, then mix until combined.
  3. Knead dough on a floured surface for about 5-7 minutes until smooth. Place in an oiled bowl, cover, and let rise until doubled in size (about 1 hour).
  4. Punch down the risen dough and roll out into a rectangle on parchment paper. Create dimples with your fingers and spread raspberry preserves on top.
  5. Drizzle with remaining olive oil and bake in a preheated oven at 375°F for about 18 minutes until golden brown.
  6. Cool slightly, whisk together confectioners' sugar with whole milk for glaze, drizzle over focaccia, cut into squares, and serve.
