  • 8 skinless boneless chicken thighs
  • 2 tbsp cornflour (cornstarch)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp vegetable oil
  • 1 tbsp unsalted butter
  • 4 cloves minced garlic
  • 110 g honey
  • 80 ml chicken stock
  • 1 tbsp rice vinegar
  • 1 tbsp light soy sauce
  • 1 tbsp finely chopped fresh parsley
  • 1/2 tsp chilli flakes
  • boiled rice

Instructions

  1. Coat the chicken thighs with cornflour, salt, and pepper until fully covered.
  2. Heat vegetable oil in a large pan over high heat, sear the chicken for about 4-5 minutes on each side until golden brown.
  3. Add butter and minced garlic to the pan, reducing heat to medium to avoid burning the garlic.
  4. In a separate bowl, mix honey, chicken stock, rice vinegar, and soy sauce; pour into the pan with chicken and bring to a boil.
  5. Simmer for 4-5 minutes until the sauce thickens and coats the chicken well.
  6. Garnish with parsley and chili flakes before serving over boiled rice.
