  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz cream cheese, softened

  • 3 large eggs
  • 1 cup sour cream
  • 3 medium apples, peeled and diced
  • ⅓ cup brown sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • ¾ cup all-purpose flour
  • ½ cup brown sugar for crumble
  • ½ teaspoon cinnamon for crumble
  • ½ cup cold unsalted butter, cubed for crumble

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar; press into the bottom of a springform pan.
  3. Beat cream cheese until smooth; gradually add sugar and vanilla. Mix in eggs one at a time followed by sour cream.
  4. Layer the cheesecake filling over the crust.
  5. In another bowl, combine diced apples with brown sugar, cinnamon, cornstarch, water, and lemon juice; layer over the cheesecake.
  6. Prepare the crumble by mixing flour, brown sugar, cinnamon, and cold butter until crumbly; sprinkle on top of the apples.
  7. Bake for about 60 minutes or until set. Allow cooling at room temperature before chilling in the refrigerator for at least four hours.
