  • 2 cups shredded rotisserie chicken
  • 1/4 lb diced turkey slices
  • 1/4 lb diced turkey pepperoni
  • 1/4 cup diced provolone cheese
  • 1/4 cup crumbled feta cheese
  • 2/3 cup diced grape tomatoes
  • 1/3 cup mild banana peppers
  • 1/2 sliced red onion
  • 1/2 cup mayonnaise
  • 3 tablespoons apple cider vinegar
  • 12 tablespoons banana pepper juice from the jar (to taste)
  • 1 tsp oregano
  • 1 tsp garlic powder
  • freshly cracked pepper
  • salt to taste (about 1/4 tsp)

Instructions

  1. In a bowl, combine the dressing ingredients: mayonnaise, apple cider vinegar, banana pepper juice (to taste), oregano, garlic powder, salt, and freshly cracked pepper.
  2. In a large mixing bowl, add the shredded chicken, turkey slices, turkey pepperoni, red onion, grape tomatoes, banana peppers, and cheeses.
  3. Pour most of the dressing over the mixture and toss until evenly coated. Adjust dressing as needed.
  4. Chill for at least 30 minutes before serving for enhanced flavor.
