  • 2 tablespoons Jamaican curry powder
  • 1 cup coconut milk or chicken broth
  • 1 large bell pepper (chopped)
  • 1 pound yellow potatoes (diced)
  • 4 cloves garlic (chopped)
  • 1 medium onion (chopped)
  • 1 large carrot (peeled and chopped)
  • 1/4 cup chopped green onion
  • 2 tablespoons chopped ginger
  • 1 teaspoon allspice
  • 1 teaspoon dried thyme
  • 1 teaspoon turmeric
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 1 Scotch Bonnet pepper (optional)

Instructions

  1. Marinate chicken with Jamaican curry powder, adobo seasoning, allspice, thyme, salt, and pepper for at least 30 minutes.
  2. In a large pot, heat olive oil over medium-high heat. Sauté chopped onion and bell pepper until softened (about 5 minutes).
  3. Add garlic, ginger, green onion, and more curry powder; cook for another 2-3 minutes.
  4. Incorporate the marinated chicken and brown on all sides (about 10 minutes).
  5. Pour in coconut milk or broth along with potatoes and carrots; adjust seasoning as needed.
  6. Bring to a boil, then cover and simmer for 20-30 minutes until chicken is tender and cooked through.
