  • 56 pieces boneless chicken breast or 68 pieces boneless chicken thighs
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 1/3 cup soy sauce
  • 1/4 cup + 2 tbsp brown sugar
  • 67 wooden skewers (soaked in water)

Instructions

  1. Soak wooden skewers in water while preparing the marinade.
  2. In a bowl, combine soy sauce, brown sugar, minced garlic, and ginger until well mixed. Set aside some sauce for basting.
  3. Cut chicken into bite-sized chunks and marinate in part of the sauce for at least 10 minutes.
  4. Cook remaining marinade in a saucepan until thickened.
  5. Thread marinated chicken onto skewers and grill on medium-high heat for about 8-12 minutes, basting with the thickened sauce.
