  • 3 tbsp rice vinegar
  • 1/2 tbsp sugar
  • 1 tbsp light soy sauce

Instructions

  1. Thinly slice the cucumbers (about 2-3 cm thick) using a knife or mandolin. Place them in a large bowl and sprinkle with kosher salt. Let rest for 5 minutes to draw out excess water.
  2. After resting, rinse the cucumbers under cold water to remove excess salt and pat dry gently.
  3. In a small bowl, whisk together rice vinegar, sugar, and soy sauce until well combined.
  4. Combine the dressing with the dried cucumbers and toss in sesame seeds until evenly coated.
