  • 1 1/2 cups walnuts
  • 1/2 cup pumpkin seeds
  • 6 cups salad greens
  • 2 cups frisée leaves
  • 12 apples or pears, diced
  • 2 avocados, sliced
  • 2 cups pomegranate seeds
  • 1 cup crumbled cheese
  • 1/3 cup honey or maple syrup
  • 1/3 cup virgin olive oil
  • 1/4 cup balsamic or apple cider vinegar
  • 2 teaspoons dijon mustard
  • 2 tablespoons honey
  • 1 tablespoon fig jam
  • 2 teaspoons orange peel zest
  • 2 tablespoons fresh orange juice
  • Salt and black pepper, to taste
  • Chili flakes, for an extra kick

Instructions

  1. Toast walnuts and pumpkin seeds in a skillet over medium heat until golden brown (5-7 minutes).
  2. Whisk together honey (or maple syrup), olive oil, vinegar, Dijon mustard, additional honey, fig jam, orange peel zest, and juice in a bowl.
  3. In a large bowl, combine salad greens, frisée leaves, diced apples or pears, sliced avocados, toasted nuts and seeds, pomegranate seeds, and crumbled cheese.
  4. Drizzle the dressing over the salad just before serving and toss gently to combine.
  5. Season with salt, black pepper, and chili flakes if desired.
